Edible Art - Underwater
2011. RSBF Underwater cordially invited Chef Janice and French Artist Loic Serot to design and conceptualize an idea solely for the exclusive Russian Business Forum. Following extensive research, they drew their inspiration from the year 1955, where an Ascari F1 pilot drove the Lancia D50 into the bottom of the sea. Seven canapés were created with inspirations from the flavors of the sea, such as bonito macarons, wakame truffles and seaweed marshmallows served on beds of Sugar Isomalt “Corals” that symbolizes the colourful corals residing deep beneath prestine waters.
The Lancia D50 was constructed with part isomalt to commemorate the final day of F1 race enjoyed by the guests on the Sky park at Marina Bay Sands Singapore.
